Yeh. Bull Fries is a euphemism. Also known as Rocky Mountain Oysters, these are testicles. (I've got to wonder what google searches are going to end up here now)
I'm pretty open as far as 'whole beast' cooking goes, but this is probably where I'll have to draw the line.
